Đưa chai rượi cho khách kiểm tra có đúng loại rượi mà khách cần hay không.
Chuẩn bị ice bucket nếu là wine trắng còn wine đỏ thì khui và để trên bàn cho khách. Phải luôn luôn fill up rượi cho khách khi dùng bữa. Nếu như rượi gần hết thì hỏi khách có cần order thêm chai mới hay không, nếu không thì chỉ cần phục vụ chai đó cho đến hết.
Lưu ý: phải định lượng được lượng rượi trong chai để rót cho bằng nhau ở tất cả các ly.
Phục vụ thức ăn:
Phải phục vụ người lớn tuổi trước (người châu Á). Phục vụ phụ nữ trước nếu là người phương Tây. Phục vụ mọi người theo chiều kim đồng hồ rồi mới đến host cuối cùng.
