Nguyên liệu:
- Đùi lợn nguyên miếng, rửa sạch, để khô ráo. Dùng kim hay gì đó xâm vào miếng thịt để thịt ngấm khi được ướp.
- Nước muối ướp thịt: Tỉ lệ nước muối mặn là 10% ( cứ 1 phần muối thì 10 phần nước ). Ví dụ : 1 kg muối biển hạt to thì cho 10 lít nước lã
- Gia vị khác (tùy khẩu vị): lá nguyệt quế, húng tây, cốt chanh ( chanh thường cho vào cá ), tiêu, tỏi, hành....
