Thắng Cố là một món đặc sản vô cùng nổi tiếng ở huyện Bắc Hà- Lào Cai. Nó là món ăn đặc trưng truyền thống của người H'mông, về sau được du nhập sang các dân tộc Kinh, Dao, Tày. Thịt nấu thắng cố theo truyền thống là thịt ngựa, về sau có thêm thịt bò, thịt trâu, thịt lợn. Món thắng cố ngựa ra đời từ cách đây gần 200 năm khi người Mông, Tày, Nùng về Bắc Hà cư trú. Tuy nhiên chỉ từ khi du lịch Bắc Hà phát triển mới được nhiều du khách biết tới. Để chế biến được món thắng cố, các đầu bếp bản địa phải sử dụng rất nhiều loại gia vị đặc biệt của vùng cao. Cách chế biến cũng khác nhau tùy từng vùng. Như vùng Bắc Hà sẽ sử dụng nhiều gia vị, còn vùng Si Ma Cai lại dùng ít gia vị hơn. Vì vậy hương vị thắng cố của từng vùng cũng khác nhau. Tuy nhiên điều khá đặc biệt khiến cho món thắng cố khá kén khách là mùi vị hơi khó chịu khi lần đầu ăn thử bởi vì nó được kết hợp bởi những gia vị rất đặc biệt của vùng cao Tây Bắc.
